Triple Chocolate Chunk Muffin

Mine didn't turn out nearly as good looking as the blogger I got this recipe from, but man oh man are they insanely chocolate and delicious! Got a chocolate craving? You'll want one of these bad boys! Oh and they are healthier for you than a regular one that you could get at the store would be! So, go ahead grab another while you're at it, I promise I won't tell!

Thankfully I had everything one hand for this recipe, including the foil muffin liners. You do want to use those or just spray your muffin pan if you're going for better looks. The paper one don't hold up so well. I also had to bake mine longer than she stated, but all turned out fine in the end.

What you're gonna need...

  • 1 3/4 cup oats (I used whole wheat quick cooking)
  • 3 egg whites
  • 3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract (I didn't use this since I only had vanilla Greek yogurt
  • 1/2 cup plain Greek yogurt
  • 1/2 tsp cream of tartar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup hot water
  • 1 cup sugar
  • 1/2 cup semi-sweet chocolate chips

What you wanna do...

Preheat your oven to 350. Line your muffin pans with foil liners or spray with non-stick cooking spray and set aside. 

In a blender or food processor mix all the ingredients together except for the chips. Blend until oats are ground and the mixture is smooth. Pour the mixture in a bowl and stir in 1/2 of the chocolate chips. Pour into your prepared muffin pans. 

Bake for 10 minutes. Remove from oven and add on the rest of the chips to the top of the muffins. Place back in the oven and back for another 2 to 5 minutes or until toothpick comes out clean.

Let them cool and enjoy!
