Is it just me or are cupcakes every where you turn? I don't really understand the craze about them. I guess it's the bite size portion of cake that you can buy with out feeling the need to eat the whole cake that sits right in front of you. But who's to say you don't buy a dozen cupcakes and eat them all? I dunno, maybe you can explain it to me.
This would be cute to make for your children just to get them interested in eating it, if you happen to have a picky eater. It didn't work for my little one, but lets be honest here she's 1 the "looks" of food isn't really going to turn her on or off to eating it. Thankfully I still have a little while for that, however she is becoming quite picky. She would only eat the corn, which I don't get because she has had this before. I more less made it this way for my own visual pleasure. Plus it takes half the time to bake.
If you really got crazy with this you could make mini meatloaf cups topped with a little bit of mashed potatoes and some corn as a appetizer or something of the sort.

What you're gonna need...
- 1 lb hamburger
- 1 egg
- 1/2 cup plain bread crumbs (she uses rolled oats, but I like this better)
- 1/2 onion minced
- a dash of garlic powder (my own little touch)
- about 1/2 cup ketchup
What you're gonna do...
- Preheat your oven to 350.
- Combine all ingredients in a medium bowl. To insure you get everything mixed up well it's best to dive in with your hands and mix everything.
- Fill a muffin tin with as much or as little meat mixture you would like. ( I got about 9 cakes)
- Bake for 30 minutes or until done.
- Top with mashed potatoes and corn if desired.
