Mandarin Orange Cake

Who doesn't love a recipe of their Grandmothers? 
This just happens to be my husbands favorite cake.
I don't know about your Grandma, but mine ways always cooking something. 
She just happened the have the last bit of this cake one day while we were over,
and asked us if we wanted it as we were getting ready to leave. 
We took it home and devoured the whole thing in one sitting. 
My husband could not get over how good it was and
I couldn't get over how light and flavourful it was. 


I'm sure I've had this before, but I don't recall it until now. 
This is thee perfect summer time cake because it is so light.

What you'll need...
  • 1 box yellow cake mix
  • 15 oz can of mandarin oranges
  • 3 eggs
  • 1/2 cup oil
  • 8 oz cool whip
  • 15.25 oz can crushed pineapple
  • 3.4 oz  instant vanilla pudding mix

What you'll do...
  1. Preheat your oven to 350. Grease and flour a 13x9 baking dish.
  2. In a medium size bowl combine your cake mix, oranges, eggs and oil, mix until well combined.
  3. Bake for 28-33 minutes. 
  4. Let your cake cool completely before applying the icing
  5. While your cake is baking combine your cool whip, pineapple and pudding, mix well.
  6. Place in fridge until ready to spread on cake. 
  7. Before serving top your cake with your cool whip mixture. Serve, and keep the rest of your cake in the fridge.
