Layered Taters

She raved about them so much that I just had to try them. I was looking for a new potato recipe anyways! So, to steal her own words right off her blog here are "Layered Potatoes at their best," - Gramma's in the Kitchen.



These are quite interesting. I, however feel like they are lacking something just not sure of what that is. The croutons give them that extra "zing" if you will. If the bite was missing a crouton it tasted as if it was lacking something, Maybe that's it, I didn't add enough croutons for my tasting? I'll try more next time. If you're thinking that they are going to be too crunchy for the potatoes (I'm not going to lie, I was thinking this) they're not, they soften up! They also could more cheese to my liking. But beings as this was my first time making this, I will know much better next time.

She did the best she could to give you the recipe for it and I am going to do just the same. Since this is more less a "put as much or as little as you would like" recipe it's kinda hard. This is what I did, mine varies slightly.

Ingredients
  • 6 medium potatoes (what can I say, we like leftovers)
  • butter (I used squeezable)
  • croutons of your choice
  • bacon bits
  • cheese slices of your choice


Peel, dice and boil potatoes till they are just done; drain. (I semi mashed mine with one of those hand mashers)


Place half of them in a oven safe dish (you will need a dish double the size of the potatoes you have); dot with butter.


Place croutons and bacon bits on top of potatoes.



Place cheese on top of croutons and bacon. 

Repeat this process once. 
Hers calls to top it with potatoes and butter, but I forgot to do this with mine. 
She microwaved hers on high for 5 to 7 minutes or until the cheese was melted. 
I placed mine in the oven at 400 for 15 minutes or until the cheese was melted.

The finished result.

They look good! I'm not sure what could be missing. My kids put Ranch dressing on theirs and I sometimes use Thousand Island. We've also put Pepper Jack cheese on them too..that changes the flavor a lot!

It may have just been me. I thought about putting Ranch on them, but didn't. I think I'm going to put more croutons in it next time and see how that goes. I don't care for Pepper Jack nor can I handle it. I might try some other cheeses though. Thanks for the great recipe!
